- 500g chicken mince
- 1 cup fresh breadcrumbs
- 1/4 cup finely chopped coriander (leaves and stalks)
- 3 spring onions, finely chopped
- 1 garlic clove, minced
- 1 tbsp fresh ginger, minced
- 1/2 red chilli, finely chopped and deseeded
- 1 tsp salt
- 1/2 tsp cracked pepper
Peanut Coleslaw
- 1/4 cup smooth peanut butter
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tsp soy sauce
- 1 tsp fish sauce
- 250g coleslaw mix
To Serve
- 4 burger buns
- Fresh coriander leaves
- Lime wedges
Method
Step 1
In a large bowl, combine chicken mince, breadcrumbs, coriander, spring onions, garlic, ginger, red chilli, salt, and pepper.
Step 2
Shape into four equal-sized patties.
Step 3
Heat a non-stick frypan over medium heat, lightly drizzle with olive oil, then cook the patties for 4-5 minutes on each side until golden and cooked through. Set aside.
Step 4
Whisk together peanut butter, olive oil, sesame oil, rice wine vinegar, soy sauce, and fish sauce in a small bowl until creamy. If needed, add a tablespoon of warm water to achieve a smooth consistency.
Step 5
In a separate medium bowl, toss the coleslaw mix with half of the prepared peanut sauce until fully coated.
Step 6
Spread the remaining peanut sauce onto the base of each burger bun.
Step 7
Top with the peanut coleslaw, chicken patty, and fresh coriander leaves. Finish with a squeeze of lime juice, and top with the bun.
