Moist, flavourful and versatile, these muffins are perfect for lunchboxes or snack time. With the option to mix in choc chips, nuts, dried fruits, or even berries, you can customise each batch to suit your household.
Ingredients
- 2 cups flour
- 1/2 cup maple syrup
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/2 cup melted coconut oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup of your choice of flavour:
- Chocolate chips
- Cacao nibs
- Shredded coconut
- Chopped dates
- Chopped nuts (e.g. pecans, almonds or walnuts)
- Fresh or frozen berries (e.g. blueberries or raspberries)
- Chopped dried fruits (e.g. apricots, cranberries or raisins)
Method
Step 1
Set your oven to 205°C and line a muffin tin with paper liners
Step 2
In a large bowl, whisk together the flour, baking powder and salt.
Step 3
In another bowl, mix the maple syrup, milk, melted coconut oil, egg and vanilla extract until well combined. It is important to act quickly as the coconut oil will start to solidify, especially if the milk is still quite cold.
Step 4
Pour the wet ingredients into the dry ingredients. Stir just until the ingredients are combined; the batter should still be a bit lumpy.
Step 5
Fold in your flavour choice gently to avoid over mixing the batter.
Step 6
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Step 7
Place in the oven and bake for about 15-20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
Step 8
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
