Pizza Crackers

These crunchy, tasty crackers are a great addition to lunchboxes as well as an easy on-the-go snack for the whole family.

 

Ingredients
  • 2 cups plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 3 tbsp olive oil
  • 3/4 cup water
  • 2 tbsp tomato paste
  • 1/4 cup Parmesan cheese, grated (optional for topping)

 

 

Method

Preheat your oven to 200°C.

Line a baking tray with baking paper.

In a large bowl, combine the flour, baking powder, salt, oregano, basil, onion powder and garlic powder.

In a seperate small bowl, mix the olive oil, water and tomato paste until well combined. Pour this mixture into the dry ingredients and stir until a dough forms.

Turn the dough out onto a floured surface and roll it out to about 3mm thickness. The thinner you roll the dough, the crispier your crackers will be.

Use a pizza cutter or a sharp knife to cut the dough into small squares or rectangles, or use cookie cutters to make fun shapes.

Place the shapes on the prepared baking tray. If using, sprinkle the tops with grated Parmesan cheese. Bake in the preheated oven for about 12-15 minutes, or until crisp and golden.

Let the crackers cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
