Sweet and sour chicken noodles are a delicious and flavourful dish that combines the tangy sweetness of the sauce with the savoury goodness of chicken and noodles.
Ingredients
- 2 large chicken breasts, chopped into 3-4cm pieces
- 3 tbsp olive oil
- 4cm piece of ginger, finely chopped
- 2 garlic cloves, finely chopped
- 1 small red chilli, finely chopped
- 1 brown onion, thinly sliced
- 270g dried udon noodles
- 150g green beans, trimmed
- 1 yellow capsicum, sliced
- 2 red capsicums, sliced
- Salt and pepper
Sauce
- 90ml light soy sauce
- 45ml rice wine vinegar
- 2 tsp tomato sauce
- 2 tbsp honey
- 2 tsp cornflour
Method
Step 1
In a large bowl, combine finely chopped ginger, garlic, and chilli. Add the chopped chicken, drizzle with 1 tablespoon of olive oil, and season with a pinch of salt and pepper. Cover and set aside for 5-10 minutes to marinate if time permits.
Step 2
In a medium bowl, whisk together light soy sauce, rice wine vinegar, tomato sauce, honey, and cornflour. Set the sauce aside.
Step 3
Bring a pot of water to a boil and cook the udon noodles according to package instructions. Drain, rinse with cold water, and set aside.
Step 4
Heat a large fry pan or wok over high heat. Add oil and once hot, add the chicken. Cook for 5-6 minutes or until almost cooked through. Remove the chicken from the pan and set it aside.
Step 5
In the same pan, add another tablespoon of oil, followed by the green beans and capsicums. Sauté for 4 minutes or until tender yet slightly crunchy.
Step 6
Return the cooked chicken to the pan. Add the cooked noodles and the prepared sauce. Stir-fry over high heat for 2-3 minutes until everything is well combined and heated through. Once cooked, divide the sweet and sour chicken noodles among plates and serve.
