Slice the steak into thin strips and place in a large ziplock bag with the corn flour. Shake well to coat.
Heat the olive oil in a nonstick frypan over high heat. Once hot, add the steak and cook for 1-2 minutes each side, or until lightly golden, then remove and set aside on a clean plate.
Using the same pan, add the soy sauce and brown sugar and bring to a gentle boil. Add the steak and cook for 1-2 minutes, or until the sauce thickens slightly and coats the steak. Finally, add the spring onions, mix together, remove from the heat and serve with your choice of noodles or rice.
