A simple yet inspiring dish that combines the freshness of salmon with the warmth of Spanish spices.
Ingredients
- 2 tbsp olive oil
- 2 salmon fillets, skin on
- 30g chorizo, thinly sliced
- 300g cherry tomatoes, halved
- 8 caperberries
- 5 sprigs of basil
- Salt and pepper, to taste
Method
Step 1
Pat the salmon dry and season both sides with salt and pepper. Heat oil in pan over medium-high heat and place salmon skin-side down.
Step 2
Cook for 5 mins and flip to cook other side. Once cooked, remove from the pan and set aside.
Step 3
To the same pan, add the chorizo, caperberries, half the tomatoes and half the basil. Season with salt and pepper as needed, and cook for 2-3 minutes, or until golden.
Step 4
Divide this mixture between plates, along with the salmon fillets and remaining fresh tomatoes, then garnish with basil.
