Made with black beans as the star ingredient, these fudgy brownies are packed with fibre, plant-based protein, and essential nutrients like folate, magnesium, and iron.

Ingredients
- 1 can (400g) black beans, rinsed and drained
- 1/2 cup oats
- 1/3 cup cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Pinch of salt
Method
Preheat the oven to 175°C
Grease or line an 8x8-inch baking pan with baking paper.
Add the black beans, oats, cocoa powder, honey or maple syrup, coconut oil, eggs, vanilla, baking powder, and salt to a food processor or blender.
Blend until smooth and creamy.
Pour the batter into the prepared pan and smooth the top with a spatula.
Bake for 20–25 minutes, or until a toothpick inserted in the centre comes out mostly clean (a few moist crumbs are okay).
Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack.
Slice into squares and enjoy!

In the Refrigerator:
Keep them in an airtight container in the fridge for up to 1 week.
In the Freezer:
Freeze brownies in a single layer on a baking sheet until solid. Transfer to a freezer-safe container or bag, separating layers with baking paper. They’ll stay fresh for up to 3 months.
To serve, thaw at room temperature or warm in the microwave for 10–15 seconds.
