These crispy baked chicken strips are perfect for little hands to dip, dunk and enjoy! Little chefs will love getting involved in anything from coating the chicken in the crunchy breadcrumb mixture to arranging them on the baking tray. Serve them with a side of tomato sauce or mayo, whether it’s snack time, lunch, or dinner.
Ingredients
- 500g chicken breasts, cut into strips (or tenderloins)
- 1 cup panko breadcrumbs
- 1/2 cup parmesan cheese, grated
- 1 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 large eggs
- Olive oil for cooking
Method
Step 1
Preheat the oven 200°C.
Step 2
Line a baking tray with baking paper and lightly grease it with a little olive oil.
Step 3
Cut the chicken breasts into strips or use full tenderloins and place into a bowl.
Step 4
In a shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder and a pinch of salt and pepper. Mix well.
Step 5
In another shallow dish, beat the eggs and pour over the chicken pieces. Stir to coat all the pieces in the egg mixture.
Step 6
Take a chicken strip out of the egg mixture and place it in the breadcrumb mixture, pressing gently to coat.
Step 7
Place the breaded chicken strips on the prepared baking tray in a single layer. Ensure they are not touching so they can get crispy all around. Repeat until all chicken has been crumbed.
Step 8
Bake in the preheated oven for 15-20 minutes, or until the chicken is golden brown and cooked through. The cooking time may vary depending on the thickness of the chicken strips.
Step 9
Serve the baked chicken strips warm. They are delicious with tomato sauce or mayonnaise.
