3 Minute Noodles

Have you ever read the ingredients on a packet of 2 minute noodles?


If you have, you might have been surprised by the list. The long list includes flavour enhancers and additives but did you know how easy it is to make your own? 


Our 3-Minute Noodle Recipe is made with just a handful of simple, real ingredients and you can whip it up a in no time using just a packet of noodles, some stock powder and whatever veggies you choose. 


It can be made on the stovetop or in the microwave, depending on your preferences and works well in a thermos for a quick, on the go lunch. 



Ingredients
  • 1 serve Chang's Long Life Noodles (or noodles of choice)
  • 2 teaspoons vegetable or chicken stock powder 
  • Vegetables of your choice, finely diced (fresh or frozen)
Method

Stovetop Method

Add 1 1/2 cups of water to a small saucepan, bring to the boil.

Once boiling, add in one serve of the noodles (if making for one person, adjust quantities for more serves), 2 tsp of the vegetable stock powder and vegetables of your choice (we went with diced carrot and frozen peas).

Cook for 3 minutes or until the noodles are softened to your liking.

Transfer to a bowl and let stand for 2 minutes to cool a little. Stir and enjoy.

Microwave Method

In a microwave-safe bowl, add 1 ½ cups of water, 1 serve of noodles (adjust for more serves), 2 teaspoons of vegetable stock powder, and your vegetables of choice (e.g., diced carrot and frozen peas).

Place the bowl in the microwave and cook on high for 3 minutes. Stop and stir halfway through to ensure even cooking.

After 3 minutes, check if the noodles are softened to your liking. If they need more time, microwave in 30-second increments, stirring in between.

Remove the bowl carefully (it will be hot!), stir, and let the noodles cool for 2 minutes before serving. Enjoy!

Notes:
  • Add whatever vegetables you like or need to use up - have the kids chop and add their own combination of favourites.
  • If adding to a thermos for a quick and easy school lunch, cook the noodles for 2 to 2 ½ minutes instead of the full 3 minutes. They will continue to soften slightly in the thermos from residual heat. Also reduce the liquid served in the thermos by at least half as the noodles will continue to absorb the liquid while stored.
