Thanks to Elato Ice Cream and @kinda_healthy_sam, enjoy this easy 3-ingredient Basque cheesecake featuring Elato Ice Cream. All the ingredients have long shelf lives and can be purchased ahead of time as an essential ingredients for every baker's kitchen!
Ingredients:
- 145 grams of our triple vanilla ice cream
- 110 grams cream cheese
- 1 egg
- Optional: lemon rind
Method:
Step 1
Melt the ice cream and cream cheese together in the microwave for 10-20 seconds. Whisk with a beater so all lumps are gone
Step 2
Add an egg and whisk until smooth
Step 3
Pour into a muffin pan or mug lined with baking paper (it will grow as it cooks so leave a bit of room). Cook at 190 degrees for 30 minutes
Step 4
Rest for 10 minutes before removing from the baking dish. Chill for 30 minutes before serving
